Abstract EN

wastewater in the UAE in order to manufacture a local product that can be used for the preservation of refrigerated foods inside the fridge and to increase the shelf life of foods.

Bacteriophage 1 was isolated from the Arabian Gulf waters using Escherichia coli as a propagation host.

Bacteriophages 2 and 3 were isolated from wastewater using Bacillus subtilis and Salmonella enteritidis as propagation hosts, respectively.

Bacteriophage 1 and 2 were polyvalent as it killed many Gram positive and Gram negative bacteria, while bacteriophage number 3 was found to be monovalent, and only kill S.

enteritidis.

This study proved that the three bacteriophages did not adversely affect beneficial bacteria (Lactobacillus, Lactococcus and Leuconostoc).

This study showed that peptone-yeast extract agar medium was the ideal medium for the propagation of the three bacteriophages.

The use of the three bacteriophages significantly reduced the population density of S.

enteritidis and E.

coli in lettuce, tomatoes, chilled fresh chicken breasts and chilled ground beef as a new way to save food compared to the treatments which included only the addition of bacteria without the addition.

of the three bacteriophages For the first time, this study found that a cocktail of locally isolated bacteriophages can be used to preserve vegetables, chicken and meat and increase their shelf life inside the refrigerators and reduce the contamination and spoilage of foodstuffs without causing any change in the nutritional value, taste, smell, or texture of foodstuffs
