Abstract EN

This study aims to highlight the totality of foods and beverages, which were prevalent in Timbuktu and nearby areas during the modern era and the beginning of the contemporary.

Nutrition, cooking methods, table traditions and eating etiquette are subjects that have not been highlighted by researchers and historians; they have largely focused their attention on issues related to politics, trade, religion, economics, thought and architecture.

In this study, we will examine everything related to the subject of nutrition in the said city, based on the information gathered by European and Arab explorers and travellers, who visited West Africa on the above-mentioned date.
