أجريت الدراسة على 60 عينة (40 عينة من الجبن القريش و 20 عينة من الزبادي) المطروحة في الأسواق المحلية في محافظة كفر الشيخ و وجد أن متوسط العد البكتيري الكلي للميكروبات الهوائية و العدد الاحتمالي الكلي لميكروب القولون و العدد الكلي للميكروب المكور العنقودي الذهبي و العد الكلي للخمائر و الفطريات في الجبن القريش كالآتي : 9.3 × 810 ± 3.7 × 810 1×810 ± 3.9 ×210، 3.5 × 210±2.75×210، 4.4×610±1.1 610 و 8.5×410±1.8×410 لكل جرام على التوالي.
كما تم عزل ميكروب الأيشيريشيا كولاي بنسبة 22% من إجمالي العينات كما و وجد أيضا أن متوسط العد الكلي للخمائر و الفطريات في الزبادي كالآتي : 1.46×410±6.8×310 لكل جرام على التوالي و قد تمت مناقشة النتائج من الناحية الصحية و الاقتصادية لمعرفة الواجب إتباعه من إجراءات لضمان جودة المنتج و الحفاظ على صحة المستهلك.
Abstract EN
A total of 60 samples of street-vended dairy products(40 Kareish cheese and 20 yoghurt)were collected from different localities in Kafr El-Sheikh governorate for evaluation of their hygienic status.
The mean values for total bacterial, coliforms, staphylococcus aureus, yeast and mould counts were 9.3×108±3.7×108 cfu/g, 1×103±3.9×102 cfu/g, 3.5×102±2.75×102cfu/g, 4.4×106±1.1×106cfu/g and 8.5×104± 1.8×104 cfu/g, respectively.
The respective means of yeast and mould in yoghurt samples were 1.46×104±6.8×103cfu/g and 8.7×103±3.1× 103cfu/g.
Fecal coliforms were isolated from 9(22.5%) of examined Kareish cheese samples.
So Recommendations for improving the quality and the public health importance for the isolated strains were discussed.
