This article attempts to approach the issue of preparing some foods in the eastern countryside in general and the Nador region in particular, and the methods of storing them, in an attempt to uncover the rich and varied heritage that is an aspect of the socio-economic history of the region.

Especially since many aspects of this heritage that are specifically related to saving and storing by traditional methods have disappeared or have undergone fundamental transformations because the change in lifestyle, technological development and the use of modern means in the storage process has diminished the importance of traditional methods and hastened the disappearance of most of them.

Therefore, it may be useful to talk about some agricultural products that were essential and formed the backbone of the inhabitants' daily meals, especially if we know that agricultural production in the eastern countryside was its primary goal is to meet the needs of the family and the tribe.
