أجريت هذه الدراسة على عدد 180 عينه من منتجات الألبان (45 من كل من الجبن الرومي و الدمياطي و القريش و الزبادي) و التي تم جمعها بطريقة عشوائية من أسواق محافظة الإسكندرية و السوبر ماركت و محلات الألبان حيث تم فحصها بكتريولوجيا لتحديد مدى تلوثها بالعديد من الميكروبات (ميكروب الأشريكية القولونية-ميكروب الكليبسيلا نيموني-ميكروب الكليبسيلا أوكسيتوكا-ميكروب الكلبيسيلا اوزوني-ميكروب الكلبيسيلا رينو سكليروماتيس-ميكروب ستروباكتر دايفيرسيس-ميكروب سترو باكتر فروندي-ميكروب انتيرو باكتر كلويكي-ميكروب انتيرو باكتر ايروجينز-المكور السبحي فيكالس-المكور السبحي فيكم-المكور السبحي ديورانس-ميكروب السيدوموناس ايروجينوزا-ميكروب السيدوموناس فلوريسنس-ميكروب باسيلاس سيريس).
تم الكشف على قدرة الميكروبات المعزولة على إنتاج أنزيم هستدين ديكربوكسيليز القادر على تحويل مركب الهستدين إلى هستامين في مزرعة نيفين عند درجة حرارة 37 م لمدد مختلفة بين 24 ساعة إلى 72 ساعة.
و باختبار قدرة البكتيريا المعزولة على إنتاج أنزيم الهستامين ديكربوكسيليز وجد أن معظم المعزولات لها هذه القدرة.
هذا و قد نوقشت الأهمية الصحية و الاقتصادية للميكروبات المعزولة و خلصت الدراسة إلى التوصيات الواجب إتباعها لتحسين الجودة الميكرو بيولوجية للجبن الرومي و الجبن الدمياطي و الجبن القريش و الزبادي و ذلك منعا لما يتعرض له المستهلك من إضرار صحية.
Abstract EN
In this work.
180 samples of cheese (Ras, Damietta, and kareish) and plain yoghurt, 45 from each were collected from dairy shops, superm-arkets and markets at different localities of Alexandria city.
The colle-cted samples were examined bacteriologically.The obtained results revealed that total Coliform count (MPN / g) in Ras, Damietta, Kareish cheese and plain yoghurt were 1.6 × 103, 1.45 × 103, 1.28 × 103 and 1.30 × 103, respectively while Entercococcus counts (MPN / g) were 4.77 × 105, 9.07, 8.54 × 106 and 7.40 × 105 respectively and Bacillus cereus counts (cfu / g) were 2.12 106, 6.29 × 104, 1.21 × 106 and 5.10 × 104, respectively.

The most of microorganisms can produce histidine decarboxylase enzyme at varying percentages.
The public health significance of the isolated histamine producing organisms were discussed.
