الخلاصة : تمت دراسة التغييرات في تكوين الهستامين و القواهد النيتروجنية المتطايرة (TVB-N) لسمك السهوة من نوع (Thunnus tonggol) الذي تم اصطياده من بحر عمان, و قد تم تخزينه في درجات حرارة مختلفة بالاعتماد على التحاليل الحسية تبين احتفاظ الأسماك بصلاحيتها للاستهلاك لمدة تتراوح ما بين 1, 4, 15 و 300 يوم في درجات حرارة صفر و 8 و 25 و – 18 م على التوالي.
كمية الهستامين و القواعد النيتروجنية المتطايرة (TVB-N) زادت بمرور الوقت, و لكن معدل التغيير اختلف باختلاف درجة حرارة التخزين, حيث انخفضت مادة الهستامين بشكل ملحوظ و أقل عن معايير إدارة الغذاء و الدواء الأمريكية (FDA) البالغة 5 ملغ / 100 غم في درجة حرارة صفر ة – 19 مْ, و لكن بيس في درجة حرارة 8 مْ أو 25 مْ.
كما أن كمية القواعد النيتروجنية المتطايرة (TVB-N) لم تنعكس على دليل الجودة في درجات القواعد النيتروجنية المتطايرة (TVB-N) إلا في درجة حرارة 25 مْ, إلا أن قياس كمية القواعد النيتروجنية المتطايرة لم يكن كافيا لتقدير مدى خطورة الهستامين على الصحة.
و لم يتم الحصول على ترابط معنوي بين المقياس الحسي و مجموع قيم القواعد النيتروجنية المتطايرة (TVB-N) مقارنة بالهستامين, و قد كان الترابط أقرب في درجات حرارة 8 مْ و 25 مْ.
Abstract EN
Changes in histamine and volatile amine (TVB-N) formation was studied in longtail tuna (Thunnus tonggol) captured in the Sea of Oman and stored at different temperatures.
Based on sensory analysis, longtail tuna maintained shelf life for 1, 4, 15 and 300 days at 0, 8, 25 and -18 oC, respectively.
Histamine and TVB-N increased with time, but the rate of change varied with storage temperature.
Histamine formation was suppressed significantly at lower than the FDA limit of 5 mg / 100 g at 0 and -18 oC but not at 8 or 25 oC.
TVB-N did not reflect the quality index at 0 or 8oC even though the samples were rejected by sensory evaluation.
No correlation was observed between histamine and TVB-N values except at 25 oC and assessment of TVB-N was not sufficient for estimating the degree of histamine-related health hazard.
Poor correlation was found between sensory score and pooled TVB-N value compared to histamine, and the correlation was closer at 8 and 25 oC than at the lower temperatures.
