أجريت هذه الدراسة بهدف قياس تراكيز بعض العناصر في أنواع مختلفة من الحلويات التي تباع في مدينة الرياض.
استخدم جهاز التحليل بالحث البلازمي-مطياف الانبعاث الضوئي (ICP-OES) لقياس تركيز العناصر.
ترتيب تركيز المعادن في جميع العينات يأخذ الاتجاه التالي : السيلينيوم > الالمونيوم > الحديد > الزرنيخ > الزنك > النحاس > المنغنيز = النيكل = الرصاص > الكروم = الكادميوم.
لوحظ وجود ارتباط إيجابي بين النيكل و الزنك و النيكل و المنجنيز و السيلينيوم و الزرنيخ.
وجد أن تركيز العناصر التي تمت دراستها أقل من الحد الموصى به من قبل منظمة الأغذية و الزراعة و منظمة الصحة العالمية.
Abstract EN
This study was conducted to measure the concentrations of some elements in different types of sweets marketed in Riyadh City.
Inductively Coupled Plasma-Optical Emission Spectrometer (ICPOES) has been used for elemental measurements.
The order of elements concentration in all samples showed the following trend: Se > Al > Fe > As> Zn > Cu > Mn = Ni = Pb > Cr = Cd.
A positive correlation was noted between Ni and Zn; As and Se; and Mn and Ni.
The concentrations of the studied elements were found to be below the safe limits recommended by the Food and Agriculture Organization and the World Health Organization.
