تم التعرف حديثا على وجود مادة الأكريلاميد في الأغذية المقلية و المصنعة، مما يعتبر دليلا على تعرض الإنسان له على نطاق واسع, و مادة الأكريلاميد هي إحدى المواد الكيميائية الصناعية التي تسبب للإنسان سمية عصبية و اعتبرت من قبل كل من IARC, USEPA كمادة مسرطنة محتملة للإنسان, هدفت الدراسة الحالية إلى تقييم التأثيرات الوقائية لكل من الشعير و المرمرية ضد النشاط المطفر و التغيرات الكيموحيوية و النسيجية التي تستحثها مادة الأكريلاميد في ذكور الجرذان المعاملة.
استعملت في الدراسة الحالية ذكور جرذان بالغة بلغ عددها الأربعين قسمت إلى ثماني مجموعات احتوت كل منها على خمسة حيوانات.
تمت تغذية تلك الحيوانات على الشعير و / أو المرمرية (5 %) كمواد دائمة في الغذاء مع أو بدون الأكريلاميد (50ملجم / كجم من وزن الجسم).
أوضحت نتائج الدراسة الحالية أن معاملة ذكور الجرذان بالأكريلاميد وحده عن طريق الفم قد زادت من متوسطات كل من ALT, AST, الجلسريدات الثلاثية و الكولسترول و حمض البول و الأنوية الدقيقة في خلايا نخاع العظم و الخلايا الجنسية (الجرثومية).
كما استحثت تلك المعاملة أضرار نسيجية في حصى و كلى الحيوانات المعاملة.
على أية حال, أدت المعاملة المرافقة لكل من الشعير و / أو المرمرية مع الأكريلاميد إلى تحسن معنوي في كل الصفات المختبرة.
كما أدت المعاملة المنفردة بكل من الشعير و / أو المرمرية إلى انخفاض مستوى كل من الجلسريدات الثلاثية و الكولسترول و حمض البول و بطريقة ذات دلالة إحصائية مقارنة بالمجموعة الضابطة.
يمكن من نتائج الدراسة الحالية استنتاج أن الشعير و المرمرية يحتويان على مركبات مضادة للأكسدة و قد يكونان مفيدين إذا استخدما كمواد مضافة إلى الأغذية في الغذاء المصنع عند درجات حرارة عالية.
Abstract EN
Acrylamide (ACR) has recently been found in fried and backed foods, suggesting widespread public exposure.
ACR is an industrial chemical that causes neurotoxicity in humans and was designated as a probable human carcinogen by the International Agency for Research on Cancer (IARC) and the United States Environmental Protection Agency (USEPA).
The aim of the present study was to evaluate the protective effects of barley and sage against ACR mutagenicity, biochemical and histological changes in rats.
Forty mature male rats were divided into eight groups and were fed barley and / or sage-supplemented diet (5%) with or without ACR (50 mg / kg b.
w).
The results revealed that ACR increased ALT, AST, triglycerides, cholesterol, uric acid, micro nucleated polychromatic erythrocytes and chromosomal aberrations in somatic and germ cells.
Severe histological lesions were found in kidneys and testes of ACR-treated animals.
Treatment with barley and / or Sage and ACR resulted in a significant improvement in all the parameters tested.
It could be concluded that these plants contain antioxidant compounds and may be useful when used as food additives to foods cooked at high temperatures.
